Some nights, you just want something that is both fool-proof and easy. All the rest of the nights, we'll go to the extra trouble of making a white sauce from scratch, but tonight ... we're popping the tops off some soup cans. My family absolutely loves this dish. Gage is asking for seconds while still scooping the last bite in his little sauce-covered mouth. Brittney sits silently in a rapturous fog of tetrazzini bliss. Dave tells me TWICE how good it is, which, coming from a man of few ... continue reading...

Creamy Chicken Crock Pot
A friend from church had surgery earlier this week, and I've signed up to bring her a few meals. I wanted to make something creamy and comforting, and this dish came to mind. Now, it's definitely creamy and comforting, but it's not at all diet-friendly, so there's your warning. Were you wanting a warning? Maybe not. :) I've been watching it lately. I have to. Something very strange happens when you hit your late 40's: your metabolism starts arguing with you. Do nothing at all ... just coast ... continue reading...
Chicken Roulade with a Creamy Marsala-Mascarpone Sauce
Oh, Instagram filters ... how I love and loathe thee. The first picture I took just didn't do justice to this dish. You really don't get a good sense of how beautifully golden the topping is on these roulades. So when I took a close-up of one of the slices, I thought I'd put a Hefe filter on it. Meh. Now it looks cartoony-golden. Oh, well. How about if you just try the recipe for yourself and you can see in real life how delicious it looks? :) This one is a little time-intensive, but it is so ... continue reading...
Dreamy, Creamy Potatoes au Gratin
For years I've been making my mom's version of Potatoes au Gratin (which my family always called Scalloped Potatoes). It was simple fare, and we loved it: potatoes, onions, flour, cheese, milk, salt and pepper. No complaints there. But a few years back, I got a little jiggy with that original recipe, and came up with something a bit dreamier/creamier. So sorry, mom ... but I can't turn back now. You may notice I am finally calling this by its proper name: Potatoes au Gratin. It's time. ... continue reading...
Grocery Shopping for a Quarantine
Is a mandatory quarantine around the corner? It's looking likely. Here's how quickly things are changing: When I started this post, I wrote this: "Here in Washington State, our governor just banned gatherings of 250 or more, and required gatherings smaller than that to have a 6-foot buffer available for attendees. He didn't out-and-out mandate that schools close (he's leaving that decision to county government for now), but that could change. According to the Washington State Department of ... continue reading...
10 Utterly Delicious Things to Make With Oatmeal
So you stocked up on all your pantry essentials, and just for good measure you went ahead and bought the BIG bag of oats -- the 20 pounder. (Or maybe you were a little more conservative and just bought four pounds worth.) And you're proud of yourself for being so prepared. You're all, "Bring on winter!" (or a quarantine!) because you are prepared! But ... you can only eat so many bowls of the usual stuff ... oats, milk, maybe a little brown sugar. Sure, you can mix it up a bit and put the brown ... continue reading...
