Salted Chocolate Chip Cookies
Sometimes, you just have to have a cookie. When that mood next strikes, take a chance on these. They’re everything you want in a cookie: soft and gooey inside, slightly crisp around the edges, buttery, chocolatey, and topped with just enough salt to bring it all together nicely. Our favorite cookie: Salty, Gooey, Soft-in-the-middle-and-crispy-around-the-edges, Chocolate Chip Cookies 1 cup butter 1/2 cup white sugar 1 1/2 cups brown sugar 2 eggs, room temperature 2 tsp vanilla 2 3/4 cups flour 1 tsp baking soda 1 1/2 tsp baking powder 1 – 1 1/2 cups chocolate chips — semisweet, milk, or a mixture (I use half and half) 1/2 tsp salt…

Coconut Balls
Good morning! And it is a VERY good morning. Last night I finished a gigantic project. The moment I sent off the last file, I shut my laptop (my loaner laptop, that is. But that’s another story), wrapped a blanket around my shoulders, and went outside to stand in the cold and breathe in all that fresh air. A little later, I wrapped Gage up in that blanket and sat us both on the front porch swing to do some more of that fresh-air-breathing, and to listen to all the frogs. Gage and I decided that there must be at least eleven out there (his favorite number) 😀 This is…

Chocolate Graham Cracker Eclair Cake
Happy almost new year! I’m spending today working on a book edit before heading down to church to ring in the new year with our church family. The organizers this year have established a Hawaiian theme for our party. Wonder if I still have time to make a grass skirt … (as if!) Today’s recipe has nothing to do with tonight (I’m using tonight as an excuse to rid my house of all the leftover cookies and candies we don’t need), but it did make an appearance at my sister’s house Christmas night. This is a favorite of our family, and it is one of those desserts that is so…

No-Bake Mountain Bars … and a Dream
I had a dream last night … and let me tell you, it was a doozy. In this dream, I was in a foreign land, or so I thought, until I realized it was Brooklyn. Dave was there with me, and someone asked him to do a Catholic funeral at a place that was supposed to be a large church, but which ended up being big and expansive, like a sports stadium, except that it also felt like a small, intimate bowling alley. We’d been assigned the center four “lanes” for this particular funeral, but other funerals were going on all around us on the other lanes. Ours was the…

Prophetic Nutty Bars
That was the craziest day I’ve had in a long time. No, that’s not extreme enough. That was the craziest day I’ve EVER HAD. It all started innocently enough. I planned to spend the morning enjoying Gage, bake a pan of Nutty bars to send to North Dakota with Britt, and then see the two of them off on the train later in the day. Riiiight. (Insert ominous soundtrack here) Here’s how the day actually went: 4:30 a.m. Get up with Gage while Dave takes Britt to work 8:00 Start making nutty bars. Realize I’ve forgotten to buy nuts 9:00 Load Gage in the car and drive to Safeway to…

New York Cheesecake with Mixed Berry Topping
They say that only two things are certain in this life: death and taxes. In my world, there are two more certainties: Dave would like tacos for dinner, and Dave would like cheesecake for dessert. Any day, any occasion, any time ...
