Dreamy, Creamy Potatoes au Gratin
For years I’ve been making my mom’s version of Potatoes au Gratin (which my family always called Scalloped Potatoes). It was simple fare, and we loved it: potatoes, onions, flour, cheese, milk, salt and pepper. No complaints there. But a few years back, I got a little jiggy with that original recipe, and came up with something a bit dreamier/creamier. So sorry, mom … but I can’t turn back now. You may notice I am finally calling this by its proper name: Potatoes au Gratin. It’s time. This is cheesy, potato-y deliciousness, and the number one comfort food in our house. Enjoy!

“Five times better” Meatballs
I know I've got a good thing going when Dave tells me four times how good it is, then adds, "These meatballs are five times better than Ikea's, and four times better than Costco's." I had no idea my husband had spent so much time analyzing meatballs, but as long as mine came out on top, I don't really care how he reached those numbers.

Chicken Roulade with a Creamy Marsala-Mascarpone Sauce
Oh, Instagram filters … how I love and loathe thee. The first picture I took just didn’t do justice to this dish. You really don’t get a good sense of how beautifully golden the topping is on these roulades. So when I took a close-up of one of the slices, I thought I’d put a Hefe filter on it. Meh. Now it looks cartoony-golden. Oh, well. Easy and Delicious Swedish Meatballs
I know I’ve got a good thing going when Dave tells me four times how good it is, then adds, “These meatballs are five times better than Ikea’s, and four times better than Costco’s.” I had no idea my husband had spent so much time analyzing meatballs, but as long as mine came out on top, I don’t really care how he reached those numbers. Chicken Pot Pie, and I Don’t Care
Be honest. You’re singing that song right now, aren’t you? Once in awhile I substitute another phrase for “Jimmy Crack Corn.” A few days ago, while scanning the breakfast menu at Nomz (our new favorite Marysville diner), I began quietly singing, “Chicken fried steak, and I don’t care. Chicken fried steak, and I don’t care. Chicken fried steak, and I don’t caaaarrrrre! …” until I looked up and saw Dave watching me with an expression that makes me think he thinks it might be time to put me away somewhere. Crock Pot (or Not) Pork Tomatillo Stew
Dave loved this. I know that because he ate two helpings, mentioned it three times during the night, and called it "restaurant quality." That's enough for me. :)
