I woke up this morning to the most wonderful sight: RAIN! Oh, how I have missed the rain. I know, I know. Everyone else is delighted with summer. And I can take a little summer. Happy Monday! More specifically, happy Meatless Monday! (At least for another hour and fifty-three minutes). Can I let you in on a little secret? We’ve not just gone meatless Mondays anymore, but meatless Tuesdays, Wednesdays, Thursdays, Fridays, Saturdays and Sundays as well. Yep. We’ve gone vegan. I can’t say for certain this very moment if this will be a lifelong lifestyle, because I have a feeling that somewhere down the road I’m going to have a hankering for Anthony’s alder-planked salmon, but I can say that I plan to be a 99% vegan. Crock Pot Chicken Santa Fe … So Easy, So Good!
So I’m trying to be good. Good as in, “I will use up every bit of whatever I buy, open, and stick in the fridge.” It’s been a thing with me — but just with weird stuff. Giant Crock Pot Pesto Meatballs
The snow is just coming down like crazy … you should see it! This is our second visit to Lake Tahoe during “winter.” Technically, it’s not winter yet, but this is the second time we’ve been snowed in. I am overjoyed about that. Ah, Tahoe. What’s not to love about towering Ponderosa pine trees, a crunchy carpet of needles and Paul Bunyan-esque pinecones, a blue sky, and an emerald lake?
