Don’t you just love when cleaning out the fridge becomes something spectacular? Me too. Here I was two nights ago, staring at a very clean fridge but a handful of items that needed tending a.s.a.p, when this little plate just kind of came together. Yay for serendipity! Happy Monday! More specifically, happy Meatless Monday! (At least for another hour and fifty-three minutes). Can I let you in on a little secret? We’ve not just gone meatless Mondays anymore, but meatless Tuesdays, Wednesdays, Thursdays, Fridays, Saturdays and Sundays as well. Yep. We’ve gone vegan. I can’t say for certain this very moment if this will be a lifelong lifestyle, because I have a feeling that somewhere down the road I’m going to have a hankering for Anthony’s alder-planked salmon, but I can say that I plan to be a 99% vegan. It’s Meatless Monday!!! And today, we have my new favorite side dish: Spicy Vegan Slaw. Now, don’t get your knickers in a twist over that middle word in the title. It’s just five little letters.
