I went to a fruit stand the other day intending to buy an avocado. One avocado. That's because I was in a crazy avocado mood and didn't dare buy three or four or I would more than likely sit down and eat three or four. I had checked the avocados at Haggen's and they were $1.99 EACH. That will be the day. So when the opportunity presented itself, I squealed into the parking lot of the fruit stand out near Smokey Point on two wheels and bolted to the bin of avocados. Nice and big ... ripe but not ... continue reading...

On Highs and Lows … and Lists
Be patient with each other, making allowance for each other’s faults because of your love. --Eph 4:2b (NLT) The young woman looked nervous, but determined. As I took a chair in front of the girl and her husband, I wondered why they'd called an emergency meeting. It didn't take long for me to find out. “I’ve made a list,” she began, “and these are all the ways you’ve failed me as a pastor’s wife.” I couldn’t believe what I heard. One by one, she read my faults out loud. Most things were petty ... continue reading...
Crock Pot Beef & Peppers
Is it weird that I took my crock pot on vacation? No? Thanks. I didn't think so. I'll tell you what -- it is HARD to eat well (make that "healthy" ) while on the road. I had no idea. We've been trying to adhere to the 80/20 rule since Dave's heart stent (eat healthy 80% of the time; allow yourself some indulgences 20% of the time). But once we left for vacation, it moved to something more like 50/50. I'm trying to comfort myself with the fact that once we get back home, I'll have more control ... continue reading...
Those Stuffed Strawberries
I'm not actually in my kitchen, or even in my house. I'm in an RV in Reedsport, Oregon, where we've been riding quads and roasting marshmallows. But I thought I was a little overdue for a new post. So here you go. Last week, we had some friends over for our first barbecue of the year. That only sounds odd if you're not from the Pacific Northwest. Everyone here knows that last week was our first barbecue-weather. Up till then it had felt a lot like winter around here. Anyway, I wanted to make ... continue reading...
Taco Cups
I am happy to report that Dave does not have to give up his weekly taco fix. You were worried for him, right? I was playing around with wonton wrappers the other day (don't give me that look ... you know we all do it) and I came up with a really good, and I mean really good alternative. These little taco cups are addictive. Dave likes beef so much that I wasn't sure how he'd react to these (turkey breast is ... well ... unappealingly white, although the seasonings helped to give it some color). ... continue reading...
Turning a Page
I set Gage on the bed next to his grandpa, and I listen while the two of them say hello. "Hey there, Big Guy!" Dave says, grinning. Gage grunts and grins back. He loves his grandpa. And he has no idea how close he came to losing him. This last week, after months of asking politely and being politely rebuffed, I finally insisted that Dave go to the walk-in clinic. The chest pain he'd been told last year was "probably arthritis" had gotten so bad that he couldn't do anything physical for more ... continue reading...
