I would like to introduce you to the world’s easiest muffins … and perhaps the moistest. And on top of all that, they’re WW-friendly. And right after I share this recipe with you, I’m going to dismantle it and try to make it healthier. That’s because it’s … uh … oh, I really hate to admit this … made from a cake mix. There. I said it. My head is down, I’m filled with shame, and weeping ever-so-softly, but confession is the first step toward repentance.
I really believe I can ditch the box and make them just as good from scratch. But it’s going to take some experimentation. I want to start with whole wheat flour and go from there. So if you like these, stay tuned for “Pumpkin Chocolate Chip Muffins Unplugged.”
The actual recipe doesn’t include chocolate chips, but c’mon. Life is short.
Pumpkin Chocolate-Chip Muffins
- 1 box spice cake mix (but not for long!)
- 1 small can (or half a big can) of pumpkin puree
- 1 egg
- 1/2 cup nonfat milk
- 1/2 cup water
- 1/2 cup mini chocolate chips (add another 1/2 cup if you’re not counting points or calories)
Mix all ingredients just until moistened. Distribute evenly among 24 muffin cups (I don’t use liners–just my stoneware muffin pan. They pop right out). Bake @350 for 20 minutes, or until the tops spring back lightly when you touch them … whatever that means.

I promise you … you’ll love them. They’re versatile enough that you can have one with coffee for breakfast, but also serve them later for dessert. If there is a later, that is. I made 2 dozen to bring to our church’s L.I.T. meeting last night and came home with an empty container. I also left 2 dozen cooling on the counter and came home to find ten gone, and my son and daughter sitting with dreamy, contented expressions and little pumpkiny crumbs on their lips.
And now … I’m off to run errands with Dave. First up: Home Depot. Next: the dump. Yay! Who knew, when we were all teenage girls dreaming about married life, that it could be so much fun going to such places? I really don’t care where we go. I just like hanging out with Dave. 🙂
