Baked Caramel Corn
My friend, Jimmy, was just telling me that he keeps a big tub handy so that when he travels to Gatlinburg, Tennessee (he’s from Georgia), he can get a caramel corn refill for just $5.00. Oh, Jimmy. Just a warning: don’t try these if you don’t like things that are gooey, creamy, buttery, flaky and just the tiniest bit salty. So … who’s still reading? No one? I’m not actually in my kitchen, or even in my house. I’m in an RV in Reedsport, Oregon, where we’ve been riding quads and roasting marshmallows. But I thought I was a little overdue for a new post. Strawberry Pretzel Salad
No scoffing now, y’hear? I mean it. You have to have one bite before saying anything about the ridiculousness of putting strawberries and pretzels together in one dish. But you’d better make it a big bite, because you’re going to need energy for all the crawling and groveling and apologizing you’ll do later for even THINKING those scoffy thoughts. Stained Glass Jigglers
Okay … so I was just waiting for an excuse to make these. And I’m going to tell you right up front: they’re more beautiful than delicious. But people mostly ignore the odd blandness of Jello in favor of the fun. So you’ll get away with these just fine. Easter provided me with the excuse I needed. We spent the afternoon with some of our favorite people — the Griffins (our hosts), the Welches, the Johnsons, and the Ovesons. Needing to bring a “finger food,” I opted for these Jigglers and a bowl full of cream puffs. Because, you know … who ever turned away a bowl full of cream…
