Perhaps the Moistest Chocolate Cake Ever
Seeing as how I’m going to be throwing a lotta lotta healthy recipes at you in the coming weeks (and hopefully, forever after that … fingers crossed!), I figured I’d better get this moist, decadent chocolate-ness out of the way right now. This is an old southern recipe that I got from who knows where. I’ve been making it since before my son was born, and he’s 23 (if that helps). Do your best not to scoff at the two secret ingredients, because if you scoff, and then you go ahead and make it anyway, you’re going to be mighty embarrassed after that first bite, and you’re going to fall…

Chocolate Graham Cracker Eclair Cake
Happy almost new year! I’m spending today working on a book edit before heading down to church to ring in the new year with our church family. The organizers this year have established a Hawaiian theme for our party. Wonder if I still have time to make a grass skirt … (as if!) Today’s recipe has nothing to do with tonight (I’m using tonight as an excuse to rid my house of all the leftover cookies and candies we don’t need), but it did make an appearance at my sister’s house Christmas night. This is a favorite of our family, and it is one of those desserts that is so…

Crock Pot Chicken Santa Fe … So Easy, So Good!
So I’m trying to be good. Good as in, “I will use up every bit of whatever I buy, open, and stick in the fridge.” It’s been a thing with me — but just with weird stuff. For instance, I’ll buy some new curry sauce at Trader Joe’s, use half of it for dinner that night, and stick the second half in the fridge, where it does the slow dance to the back along with all the other archaeological relics. But no more. Today, I turn over a new leaf. And it begins with that can of chipotle in adobo that I bought and opened when I got home from…

My New Salad Obsession
It’s over. The big turkey platter is back in the dark recesses of the cupboard, where it will remain for another 359 days. The leftovers are gone. The stretch pants? Well, they might still be on you, depending on how involved you were in the disposing of all those Thanksgiving leftovers. So you might be in need of a healthy recipe at this point. And have I got a salad for you! It’s my new addiction. If you put a bowl of this in front of me alongside, say, a Rib Eye steak, I’m pretty sure I’d eat the salad first. (I mean, I’d eat the steak after that … I’m…

What To Do With All Those Thanksgiving Leftovers
Happy Saturday after Thanksgiving! (Otherwise known as, “What on earth am I going to do with all these leftovers?” Day). I assume you have a fridge full of stuffing, turkey, gravy … probably not gravy. That’s usually the first thing to go. This year, we have TWO kinds of stuffing in the fridge. That’s because our friends, Jay and Kathy, brought their amazing cranberry and sausage stuffing, and I made my usual batch for Dave, who doesn’t eat cranberries if he can help it. We are leaving in a half an hour to take our visiting friends, Mark, Cathy, and their daughter, Toni, to Leavenworth. If you’re not native to…

Giant Crock Pot Pesto Meatballs
The snow is just coming down like crazy … you should see it! This is our second visit to Lake Tahoe during “winter.” Technically, it’s not winter yet, but this is the second time we’ve been snowed in. I am overjoyed about that. Here’s what our deck looked like early this morning … … and here’s the tree in front of our condo. Don’t let that blue sky in the background fool you. It grayed right up again and started snowing within minutes of this shot. Yay! I had planned to make chili, but for some reason today, spaghetti and meatballs sounded better. So that’s what’s in the crock pot…
