If you’ve never made corn salsa before, I recommend that you start today! This is one of our all-time favorites and it’s so good, you really don’t need anything to enjoy it but a big old spoon. But if you want to eat it WITH something else, I recommend chips, nachos, tacos, baked potatoes, quesadillas … or any number of delicious possibilities. Besides being incredibly tasty, this recipe just feels … wholesome. Which is what we’re going for these days. We’re trying to eat as whole food, ... continue reading...

Go-With-Anything Corn Salsa
Does anyone know of a good corn salsa addiction recovery group? I'd like to find one close to my home ... with friendly people, and coffee ... and it would be a bonus if they had corn salsa on the snack table. I can't stop eating this! I wanted to come up with the simplest of all corn salsas -- just something I could put together at a moment's notice with whatever I had in the pantry, plus the fresh cilantro I was foresight-ful enough (that's a word, right?) to pick up. Well, here she is. I ... continue reading...
Taco Cups
I am happy to report that Dave does not have to give up his weekly taco fix. You were worried for him, right? I was playing around with wonton wrappers the other day (don't give me that look ... you know we all do it) and I came up with a really good, and I mean really good alternative. These little taco cups are addictive. Dave likes beef so much that I wasn't sure how he'd react to these (turkey breast is ... well ... unappealingly white, although the seasonings helped to give it some color). ... continue reading...
Crock Pot Chicken Santa Fe … So Easy, So Good!
So I'm trying to be good. Good as in, "I will use up every bit of whatever I buy, open, and stick in the fridge." It's been a thing with me -- but just with weird stuff. For instance, I'll buy some new curry sauce at Trader Joe's, use half of it for dinner that night, and stick the second half in the fridge, where it does the slow dance to the back along with all the other archaeological relics. But no more. Today, I turn over a new leaf. And it begins with that can of chipotle in adobo that I ... continue reading...
Tera’s New Favorite Soup
So, if you haven't noticed, we make soup a LOT around here. A lot as in at least once a week, and sometimes two. In the winter, that might bump up to three. It's just amazing to me how easy soup is, and how just the addition or subtraction of a few things can create a brand new recipe. I can't even remember the last time I cracked open a cookbook to make soup. It's just something that kind of makes itself based on what's on hand and what needs to go. Yesterday, Tera made me play cards with her ... continue reading...
Bump: Breakfast Burritos x 2
I'm bumping up this post from last year (almost exactly a year ago, actually) because I'm down in the San Francisco area all week visiting my friend, Sherri, whose recipe I shared with you back then (it's the second recipe). I always love staying with Sherri. Her condo is one of the most peaceful places on earth. Plus, that girl really knows her way around a burrito. So a friend texted me a few weeks ago with a question. "Where in Marysville can I get a good breakfast burrito?" Jay ... continue reading...
