Chicken Roulade with a Creamy Marsala-Mascarpone Sauce
Oh, Instagram filters … how I love and loathe thee. The first picture I took just didn’t do justice to this dish. You really don’t get a good sense of how beautifully golden the topping is on these roulades. So when I took a close-up of one of the slices, I thought I’d put a Hefe filter on it. Meh. Now it looks cartoony-golden. Oh, well. How about if you just try the recipe for yourself and you can see in real life how delicious it looks? 🙂 This one is a little time-intensive, but it is so worth it. [amd-zlrecipe-recipe:17]

Chicken Pot Pie, and I Don’t Care
Be honest. You’re singing that song right now, aren’t you? Once in awhile I substitute another phrase for “Jimmy Crack Corn.” A few days ago, while scanning the breakfast menu at Nomz (our new favorite Marysville diner), I began quietly singing, “Chicken fried steak, and I don’t care. Chicken fried steak, and I don’t care. Chicken fried steak, and I don’t caaaarrrrre! …” until I looked up and saw Dave watching me with an expression that makes me think he thinks it might be time to put me away somewhere. If I up and disappear, you know what happened. Here’s a recipe that manages to be comfort food and company…

Asian Chicken Lettuce Wraps
Back in October, when we were down in Costa Mesa for Pastor Chuck Smith’s memorial, we ran into a friend who had moved from Washington back to southern California. I almost didn’t recognize Ken, because he had lost 70 lbs since we’d seen him last, which really hadn’t been that long. Ken shared his secret: the 4-Hour Body Diet. He gave me all the particulars and said to save my money on the book. I happened to glance through it at the library and decided he’s right. This diet is also known as the “Slow Carb” diet, and there are just a few simple rules: Get rid of all white…

Crock Pot Chicken Santa Fe … So Easy, So Good!
So I’m trying to be good. Good as in, “I will use up every bit of whatever I buy, open, and stick in the fridge.” It’s been a thing with me — but just with weird stuff. For instance, I’ll buy some new curry sauce at Trader Joe’s, use half of it for dinner that night, and stick the second half in the fridge, where it does the slow dance to the back along with all the other archaeological relics. But no more. Today, I turn over a new leaf. And it begins with that can of chipotle in adobo that I bought and opened when I got home from…

Chicken Saté with Peanut Dipping Sauce
Oh, how I love SatĂ© … Sate … Satay. WhatEV. You can’t ruin this dish. Spell it however you like, burn the edges, forget to wipe the sauce off the rim of the dish before you take the picture … it doesn’t matter. This is a-may-ay-zing. I played around with the recipe I found in Artisinal Gluten-Free Cooking, new favorite cookbook. If you’re GF and haven’t already seen this book, I think you should run over to Amazon and take a peek. I left the satĂ© exactly as written (and it is delicious!), but I toyed a bit with the peanut dipping sauce because it just wasn’t quite there for…

Almond Dijon Chicken
Every so often, I go on a pantry rampage. When I just can’t take the mess anymore, I start grabbing random items and forcing myself to use them just so I don’t have to look at them anymore. That’s what happened recently. I was getting pretty sick of the French’s fried onions container falling off the shelf every time I put the jug of oatmeal back in there, so one day I said, “Enough.” Looking around again, I spied a baggie full of sliced almonds that I couldn’t fit in my big square Tupperware container of nuts. I figured that could go too. And then I found an almost-empty container…
