Is it weird that I took my crock pot on vacation? No? Thanks. I didn't think so. I'll tell you what -- it is HARD to eat well (make that "healthy" ) while on the road. I had no idea. We've been trying to adhere to the 80/20 rule since Dave's heart stent (eat healthy 80% of the time; allow yourself some indulgences 20% of the time). I am happy to report that Dave does not have to give up his weekly taco fix. You were worried for him, right? Chicken Pillows & Classic Wedge w/Candied Pecans and Balsamic Glaze
In the words of Brittney, spoken after her first bite at lunch today, "I'm not gonna lie to you ... this is delicious." This one takes a little time, but it's completely worth it. You should see the pile of scraped-clean plates in my kitchen right now. The chicken pillows are light, airy and cheesy, surrounded by a satisfyingly crunchy crescent shell. Well, I'm two days late in telling you this, but I heart Valentine's Day. I really do. I think it's because it's such an easy day to celebrate, when compared to the big cook-fest on Thanksgiving and the all-December-hoopla that goes with Christmas. Cabbage Patch Soup
I've heard that a restaurant in Snohomish--named, oddly enough, the Cabbage Patch--first invented this soup. Could be. Otherwise, that's just a very weird coincidence. I've only been in that restaurant once and I didn't have the soup, so I can't be certain it's the exact same thing.
